Chateau Beynat, Castillon Cotes de Bordeaux
The chateau is certified organic and in fact working biodynamically since 2015, with no chemicals used in the vineyards and an emphasis on herbal treatments and working in tandem with lunar cycles. The grapes are sorted three times to only keep the healthiest bunches. The whole bunches are vatted and after few days, the fermentation starts naturally with indigenous yeasts. Regular pigeage and remontage is carried out to extract colour and tannins. The wine then is aged in cement vat for 18 months. Beynat has a clear, attractive not over extracted mid red colour. The nose is clearly printed by saline notes from limestone, and the palate offers a delicious raspberry fruit, with a little spice and hint of cinnamon.
